21 Feb SIEBENSTER Coffee Roaster: Additional Destoner Installed at ‘Roastery Hyangcho’ in Ilsan
We have installed an additional destoner (roasted bean stone remover) at ‘Roastery Hyangcho’ — SIEBENSTER’s very first customer and now a flagship user of our SIEBENSTER coffee roasters, running a very successful business.
Because the space has a white tone, I wondered whether a large black destoner would work once installed, but fortunately the lower part of the interior is black, so the destoner actually felt grounded and stable, as if settling downward relative to its size. That was a relief.

The destoner for SIEBENSTER coffee roasters is nothing particularly special compared with other destoners. It simply sticks to the fundamentals.
All destoners of this type filter out stones and metal by density difference. Because we made the bean transfer section of our product narrow, beans are drawn in well without applying excessive air pressure, and because we made the transfer section curved to reduce collisions, the bean breakage rate is low.
The most important things to consider when buying a destoner are how well it removes stones and how much breakage it causes, and when you weigh both, I am confident it will be the best choice. In addition, because we provide a container that is large relative to the basket size, it also works well for short-term storage.
Now that I have written it all down, there are quite a lot of advantages, aren’t there? haha

Depending on the roast level, chaff can escape through the exhaust outlet. Since Hyangcho does a lot of light roasting, a filter screen has become essential for them. However, if you mainly use the destoner for commercial, espresso-blend-focused roasting, you can do without a filter screen on the exhaust outlet without much trouble.
A mesh screen is installed inside, so roasted beans will never escape through the exhaust outlet. ^^
Performance is what matters most of all, isn’t it?
So we ran a test right after installation.
All the stones we used were ones collected from green coffee bags we already had.
What matters is the size of stones that actually come out of green coffee. If you run a test with big stones thrown in just for the sake of testing, it proves nothing~
As expected, the test was a success!
It is a fundamentals-focused destoner that filters out even small stones 100% of the time.
The price is so reasonable that, when you think of the damage that could result from foreign matter being detected, this is equipment you simply must buy.
After discussing with the owner of Hyangcho, they said it would be nice to have a small destoner for micro roasteries, so we plan to release one soon.
I will wrap up this post with a promise that even small shops will be able to cut their hand-picking time dramatically and shorten their working time.
For those curious about what SIEBENSTER coffee roasters can produce, I am leaving a link to the ‘Roastery Hyangcho’ store.
They use such excellent green coffee that part of the credit goes to the green coffee (?), but I don’t think I need to explain that this is the kind of performance you get when you use good green coffee.
I confidently recommend their specialty roasted beans.
The shop sells at such affordable prices that you will find yourself using it often~
