13 Sep SIEBENSTER 6 kg Coffee Roaster Installed at A.V.O.C in Cheongna
We installed a SIEBENSTER 6 kg roaster at AVOC, a genuine coffee roastery in Cheongna.

Why a genuine coffee roastery, you ask?
There are a few reasons.
The owner of AVOC is just starting a new independent cafe, but already has considerable standing in the coffee world.
The owner has long been active as an SCA AST and, at the same time, serves as an IBS supervisor.

Many people stop at earning certifications, but few keep teaching coffee, build the equipment for that teaching, and develop their own curriculum.
In that respect, I judge that a background closer to that of a producer than a distributor of coffee culture leaves nothing lacking in calling this a genuine coffee roastery.

As the name AVOC (A Variety Of Coffee) suggests, it pursues the diversity of coffee itself rather than variation drinks, and that is another place where you can sense its sincerity.
Another criterion is the preparation period.
AVOC spent 8 months preparing the cafe.
That is because they take coffee so seriously that, even after all the interior construction was finished, they spent roughly another 5 months on preparation before opening.
Their personal standards are that high, and it must be their conviction that they cannot sell customers something they themselves cannot accept.
In that respect, if you want a delicious cup of coffee in Cheongna, this is a place you simply must visit.
Now, shall we take a look at the interior as well?
I share these photos with regret, first of all, that a photo cannot fully capture the character of the space.

First, the bar.
The first thing that catches the eye is the Storm, a high-end espresso machine.
Then there are the Mahlkönig EK43 and PEAK, and an E61 as the sub-machine for training.
What more needs to be said… It’s the best.

This is the overall view of the interior.
So tidy and modern that you wonder, ‘Is this really an independent cafe?’
You can feel the owner’s discerning eye.

The desserts are a lineup of items that pair well with the coffee.
Now let me also introduce photos of our installed SIEBENSTER roaster.

The installed model is the SP-06 in white-gold, a 6 kg LNG model.
Doesn’t its clean, uncluttered look blend in well with the space?
If you are thinking of coffee in Cheongna, please remember AVOC.
I am also looking forward to seeing how SIEBENSTER’s potential bursts forth in the hands of an expert.
