30 Aug SIEBENSTER Coffee Roaster Installation at Kim’s Mountain Coffee in Cheongsong
We visited Kim’s Mountain Coffee, at the foot of Juwangsan Mountain in Cheongsong, to install a SIEBENSTER SUG 12 kg roaster.

The open, atmospheric scenery of Juwangsan Mountain unfolds around the cafe like a folding screen, and it feels restful in itself.
This was my first time in Cheongsong, and here it felt as if time itself moved more slowly, with a real sense of leisure.
Thanks to the owner of Kim’s Mountain Coffee, I am leaving full of energy.

The cafe is a two-story brick-clad building that somehow makes you want to step inside.

The interior is done in wood. The furniture, too, is of an uncommon design, making this a space where you can tell at a glance that Kim’s Mountain Coffee has an eye for quality.
A wooden interior can easily feel dated, but here steel, LED lighting, and exposed concrete blend into an exquisite harmony of classic and industrial, creating a wonderful atmosphere.

I toured the roasting room. I could see a Probatino and a 5 kg cast-iron roaster. There was not enough room in this space to fit a 12 kg roaster as well, so we decided to place the SIEBENSTER in the main hall.

First, we had a long conversation with the owner.
Over a cup of coffee~
The owner of Kim’s Mountain Coffee had obtained an international patent for a smoke coffee recipe.
When I first encountered smoke coffee, I honestly had my doubts. I wondered what could possibly be special about a recipe….
But after trying it, that opinion changed completely.
First, the coffee is served in a very cold copper cup, and when you lift the lid, smoke drifts out like mist rising off water, and the aroma of the coffee spreads.
Seeing the smoke rise, your eyes create a visual illusion of heat.
The moment you touch the cup to taste the coffee, an intense coldness is transmitted to your hand. Here comes the first twist~!
Then, when you look at it again to taste the coffee, you see the smoke once more and are fooled into thinking it will be hot.
But when the drink touches your lips, you snap out of it again.
And above all, smokiness and dark-roast coffee go together really ~~~ well.
One cup of coffee was enough to feel why this is special.
This was without a doubt the only place where you can enjoy coffee with all five senses.
And I was even more amazed to learn that all of this had been planned so thoroughly.
I have tried all sorts of coffee over more than 10 years, but this is the first place I have seen that lets customers experience coffee with such a clear philosophy and such thoroughness.
I was also deeply moved by the owner’s philosophy of pursuing coffee that cannot be had just anywhere, but can be experienced only here.
The roast point was distinctive as well.
With the specialty market expanding and light roasts all the rage these days, a dark-roast blend that stays true to the character of coffee added a truly deep, lingering impression.
Even though it is an independent cafe, now I understand why there are so many requests for training and franchise inquiries!
If the opportunity arises later, I sincerely would like to run a cafe under this brand myself someday!!

We put the SIEBENSTER SUG-12 roaster up on the main hall floor.
The wooden floor has a step about 15 cm high on all sides, so getting it up there took some effort, but when everything is finished and it sits in place like this, it is a very satisfying feeling.

The classic look of the UG style suits the space well.
On top of that, the gold finish goes well with the wood~
Now that Kim’s Mountain’s coffee will be prepared with a SIEBENSTER, I look forward to seeing what kind of changes it can bring about.
Meeting the owner of Kim’s Mountain was truly impressive, so I am deeply grateful, and we will keep cheering you on as a good partner.
